Sea-Bream Ceviche

 – PASSION FRUIT & CORIANDER –
FOOD PAIRING – HYSTÉRIE
This is a borrowing to the freshness of this traditional dish from Peru celebrating raw fish. It is perfect on summer nights, before going out dancing in the open.
INGREDIENTS POUR 4 PERSONNES
  • 3 sea-breams
  • 2 passion fruit
  • 1 bunch of parsley or coriander
  • 8cl of cooled H.THEORIA Hystérie
  • Salt
  • Pepper
RECIPE

Wash the see-bream fillets and peel them. Slice them in 1 or 2-centimeter-large strips. Display the strips in a soup plate.
Open the 2 passion fruit and sprinkle a few grains on the fish.
Pour the Hystérie liquor on the sliced fillets.
Cut very thin slices of red onion and spread them on the fish with the chopped parsley or coriander.
Serve cold.
